Coalition for Food and Health Equity: Bridging the Gap in Food Insecurity

The Coalition for Food and Health Equity is rewriting the narrative around food insecurity, one meal at a time. Born out of the urgency and isolation of the COVID-19 pandemic, this organization exemplifies how a single idea can blossom into a lifeline for communities. Dr. Leeja Carter, a development strategist and former professor, recounts how a simple visit to a Jersey City café during the early days of the pandemic became the catalyst for this groundbreaking initiative.  

“I went into one of my favorite cafés just before the shutdown,” Dr. Leeja shares. The café owner was facing financial collapse while simultaneously grappling with increasing requests for free food from community members. Recognizing the dire situation, Dr. Leeja sprang into action, rallying her students to form what would later become the Coalition for Food and Health Equity.  

The Coalition’s initial efforts involved raising $30,000 on GoFundMe to support the café. The funds enabled the café to prepare healthy, tailored meals, which volunteers personally delivered to individuals experiencing food insecurity. “We didn’t just deliver meals,” Dr. Leeja emphasizes, “We built a process that ensured we understood each person’s unique needs, from food allergies to medical conditions.”

The Coalition for Food and Health Equity grew rapidly as word spread about their impact. Local officials, like Hudson County’s Health and Human Services Director, reached out for assistance, seeking help for thousands of seniors and people with disabilities facing food insecurity. This marked a pivotal moment as the Coalition transitioned from a small grassroots initiative to a robust organization addressing systemic inequities.  

Today, the Coalition for Food and Health Equity doesn’t just distribute meals; it fosters empowerment. The organization is dismantling barriers and promoting wellness by ensuring everyone has access to healthy, affordable food. “This is about more than just food,” Dr. Leeja explains. “It’s about equity and dignity. We’re proving that everyone deserves access to nutritious meals, no matter their financial situation.”  

As the Coalition continues to expand its reach, it serves as a beacon of hope and a model for tackling food insecurity at its roots. Through resilience, innovation, and community support, the Coalition for Food and Health Equity is changing lives—one plate at a time.
